料理としてご提供する上でその時のコンディションを見ることは欠かせません。

Without private rooms or partitions, I can see all customers from the counter.
Due to this space, I can serve customers with true "umai", deliciousness.

I carefully select the ingredients not by reputation, but by whether they are truly delicious.
It is also essential to look at the condition of the ingredients at the very moment when serving them.

今日の食材の味はもちろんのこと、
お客様の好みや食事の進み具合、
召し上がるタイミングなどを瞬時に判断し、その一皿を調える。
料理しながら何度も顔を上げ客席を見わたし、
口にする人に寄り添ったアドリブを効かせる。
客席を置いてきぼりにしません。

Dishes are prepared with careful consideration for current condition of ingredients,
customers' preferences, and the progress of the meal.
While cooking, I continuously look around the seats and do ad-libs with the dishes to perfectly accompany the customer.

器は料理と共にあるもの、です。
完璧に整っていればいいということではありません。
器を前にした時に、旨い絵が浮かび上がってくるか。
盛り付けたいという衝動が立ち上がるか。
その感覚が、器と料理が一緒になった時の可能性を示してくれます。
作家さんとは酒を酌み交わしながらたくさん語ります。
そうして生まれる一皿に、私自身も魅せられているのかもしれません。

The plate is part of the dish.
It doesn't have to be perfectly stylish on its own.
When you face a plate, does a delicious picture emerge?
This feeling shows us the possibilities when the plate and food come together.
I talk a lot with the potters over drinks.
Perhaps I myself am fascinated by the plates which are born in this way.

Ingredients

食材を選ぶ時に大事にしているのは、まずは「旨い」と感じるかどうか。
その上で、生産者の方々とちゃあんと話をするようにしています。
どうやって作られているのか、手間や思い、そこにある物語をたくさん聴くんです。
それらを背負ってお客様のもとに届けるのが料理人、自分の腑に落とした上で料理にかかります。
食材と料理、旨いに妥協しない大切なあわいがここにあります。

When choosing ingredients, the first thing I consider is whether they are "delicious".
On top of that, I speak directly with the producers.
I learn how they are grown; efforts and thoughts, and stories within.
It is the chef's responsibility to deliver these stories to the customers.
I do not compromise on ingredients, food, and deliciousness; this makes the greatest harmony.

Liquor

日本の酒の奥深さを初めて知った日から、酒蔵やワイナリーを訪ね歩くようになりました。
醸造の現場を見て、味わい、対話をする。
すると時には、ここまでやるのか！と、震えるような作り手さんに出会うことがあります。
今年も旨い酒ができた、けれども来年はさらに上を。
このスタンスでつくられる日本の酒には伸び代しかありません。
そういう酒と料理が織りなすマリアージュを是非ご堪能をください。

From the day I first learned about the depth of Japan's sake, I started visiting breweries and wineries.
I observe the brewing site, taste the sake, and interact with the people working there.
Then sometimes, I meet creators who make me shiver like "you go this far!?".
"We could produce good sake again this year, but next year we will do even more".
Japanese sake made with this stance has only room for growth.
Please enjoy this fusion of sake and food.
